A commercial kitchen is the most electrically demanding room most businesses will ever build — heavy fixed equipment, high ambient heat, steam, water on the floor, stainless everywhere, and staff working fast. Everything about the electrical design has to account for that environment, not just the load numbers. Restaurants, cafes, bakeries, school and rest home kitchens, catering and food production all run on the same principles.

Start with the equipment schedule, not the floor plan

Every piece of fixed equipment has a rating, a phase requirement and a connection type, and the total decides everything downstream: supply size, main switchboard, submain and circuit design. Combi ovens, rangehoods, fryers, coolrooms, blast chillers, dishwashers and hot water all belong on that list. Diversity applies — not everything runs at full load simultaneously — but the assessment has to be done properly rather than guessed, because getting it wrong in either direction is expensive. Undersized means you're back doing it again; oversized means you paid for supply you'll never use.

What commercial kitchen electrical involves

  • Dedicated circuits and correctly rated isolators for each item of fixed equipment

  • Extraction and make-up air, including interlocking so the cooking line and the canopy work together — coordinated with the mechanical contractor

  • Accessible emergency isolation so equipment can be shut down quickly and safely from a sensible position

  • Sealed, appropriately rated fittings and outlets suited to a wet, hot, frequently washed-down room

  • Coolroom and freezer circuits with the controls and alarm wiring that protect the stock inside

  • Bright, cleanable, sealed lighting over the line — kitchens are a task-lighting problem, not an ambience one

  • RCD protection throughout, and equipment positioned so leads never cross a wet floor

Why kitchen equipment trips RCDs

Commercial kitchen appliances with heating elements develop small leakage currents as they age, particularly in a steamy environment. Individually each is within tolerance; put several on one RCD and the accumulated leakage trips it, seemingly at random. This is why equipment gets separated across circuits rather than grouped for convenience — and why the fix for a kitchen that keeps tripping is usually circuit design plus insulation testing, not replacing appliances one at a time.

Frequently asked questions

Does a commercial kitchen need three-phase power?

Almost always. Larger ovens, coolrooms and cooking equipment are commonly three-phase, and total kitchen load rarely fits a single-phase supply. Confirm before you sign a lease on a tenancy that has never been a kitchen.

Who coordinates the extraction interlock — electrician or mechanical?

Both, and it needs to be agreed early. The mechanical contractor supplies the canopy and fans; we do the power, controls and interlocking wiring. Problems here come from assuming the other party has it covered.

Can you install equipment we've bought secondhand?

Usually, provided it's in safe condition and we can identify its rating and connection requirements. We'll test it before connection and tell you honestly if it isn't fit to install.

Can the kitchen keep operating during an upgrade?

Often partially, with work staged around service. Anything needing isolation goes into a close-down window — overnight or on your quietest day.
