The mistake that delays openings: supply capacity
Most hospitality tenancies were previously something else — retail, an office, a different restaurant with half the equipment list. The existing supply and main switchboard were sized for that use, not yours. If your equipment schedule exceeds what's there, you need a supply upgrade, and that runs on the lines company's timeline rather than your builder's. Weeks, not days. This is the single most common cause of a delayed hospitality opening in Auckland, and it is entirely avoidable by asking the question before you sign or immediately after.
What a hospitality fitout actually needs
A load assessment against the real equipment schedule — every appliance, its rating, and whether it's single or three-phase
Dedicated circuits for the kitchen line, coolroom, dishwasher, glasswasher and coffee machine — shared circuits are where nuisance tripping comes from
Extraction and its interlocking with the cooking line, coordinated with the mechanical contractor
Bar power: under-bar fridges, ice machine, glasswasher, POS, and enough outlets that nobody runs a multi-board behind the till
Zoned, dimmable lighting — dining, bar, back of house and a separate bright cleaning scene
Emergency and exit lighting to suit the final layout — it must reflect where the walls and exits actually ended up

Every hospitality business adds equipment in year one — a second coffee grinder, an extra fridge, outdoor heaters, a bigger ice machine, a pizza oven that seemed optional at design stage. Spare ways in the board and spare capacity in the supply cost almost nothing to allow for during a fitout, and are disruptive and expensive to add once you're trading seven days.
